Our Soft-Set Honey brings the local landscape’s richness right to your table.
It’s lovingly harvested from bees that feast on a wide mix of blooms, from blackberries and lime to clover, cherry, apple, phacelia, and a whole bunch of wildflowers.
This delightful variety gifts our honey its unique flavor, brimming with remarkable tastes and soft whispers of floral notes.
Beekeeper Stephen Gray shares his method for making Soft Set Honey:
“When he collects honey from his beehives, it might be in a liquid form or it might have naturally thickened.
What it turns into depends on the types of plants and flowers the bees visited to collect pollen. To make ‘soft set’ honey, he takes the thicker honey, warms it up a bit, and then stirs it often over three days.
This process turns it into a light, creamy honey. It’s all natural, with nothing added to it.
Sometimes, there’s a bit of froth on top, but you can just scoop it off if you’d like.”
